Gramma was a master of making do. She knew all sorts of ways to economize and to put food on the table that everybody would enjoy and never feel deprived. This is one of the recipes I found stashed in my mom’s things that we got when she passed away. It is just one of many that came from the care facility.
If you are an experienced cook you will see right away that this is not your classic mayonnaise recipe. The only thing it has in common with that are the eggs. Otherwise it might be more appropriately called “sandwich spread” or mock mayonnaise and it doesn’t taste like the mayonnaise we are used to but it has a sweet tangy flavor all its own. It’s very good if you simply forget the name and enjoy it for its unique quality.
It’s very easy to make and if you don’t want to go to the trouble of making classic mayonnaise this is the way to go. This would have been a staple on the farm and gramma would have sent one of the girls to the kitchen to make it just before dinner or supper was served. I used this to make potato salad and for a spread on BLT sandwiches. They were both outstanding.
I know that it looks like mashed potatoes but it’s not.
Gramma’s Mayonnaise
Combine
2 rounded tablespoons flour
4 tablespoons sugar
1 teaspoon salt
In a separate bowl beat 2 eggs.
Add ½ cup water, ½ cup white vinegar and softened butter the size of 2 eggs.
Mix everything in a sauce pot and boil until thick, stirring constantly.
Suggested Potato Salad Seasonings and Additions
Celery seed, chopped onions, hard boiled eggs, chopped red and green bell pepper, sweet pickles, paprika
